Blueberry Chia Cereal

Delicious and nutritious – not just a catchy phrase but the perfect way to sum up this blueberry cereal, which is gluten-free, wheat-free and full of nutritional heavy weights.

Ingredients:

1 cup ~ blueberries (remember to take time to defrost in the refrigerator or at room temperature if using frozen berries from the freezer)

1 1/2 cup ~ dairy-free milk (i.e. almond milk, coconut milk, or any other animal-free milk)

1 ripe banana

1 tablespoon ~ chia seeds

1 tablespoon ~ hemp seeds or hearts

Optional Ingredients

Want it sweeter? You could add either of following:

1/2 tablespoon of natural sweetener such as maple syrup, sucanat, honey or other sweetner of your choice

OR

1 medjool date cut/tear into any number of pieces or 3 to 4 less sweet dates

Now it’s time to get working!

Directions

  1. In an empty bowl mash the ripe banana with a fork until it is very mushy with no solid parts left.

  2. Pour the dairy-free milk over the banana and use the fork to further mash the banana into the milk and stir until the banana is mostly mixed into the milk and there are few if any clumps of banana left. Alternatively, you could blend the banana in the milk with a blender and then pour into a bowl.

  3. Put chia seeds into the banana-milk mixture and stir around with your fork or spoon

  4. Add the blueberries.

  5. Pour in the hemp seeds or hemp hearts

  6. (OPTIONAL STEP) While the banana adds sweetness and maybe even your milk if you are using a sweetened version, you could add either type of the optional sweeteners listed in the ingredients above at this time.

  7. Let sit for 10 or more minutes so the chia seeds could become more jelly-like.

  8. After 10 or more minutes, use a spoon to gently mix up the ingredients.

  9. Eat and enjoy!

A MYLE (Make-Your-Life-Easier) Tip: To save time. Soak the chia seeds the night before in the milk and then proceed with the recipe as stated above. The only difference is instead of the milk and chia seeds being two steps, they are now one, because you will be pouring the milk-chia mixture onto the mushed banana and then you will use a fork or spoon to mix these three ingredients together before going on to step 4.
